Part-timer

So this is day #9 experimenting with the vegetarian lifestyle.  This past Saturday we went to a friend’s house to BBQ and had some pulled pork and it was amazing! (That's why I called myself a part-timer veg. )  I enjoyed it, but didn’t eat much because I didn’t want to completely ruin my challenge.  The reason I’m doing this is to see how I feel on the inside and in hopes it would also show on the outside, I haven’t seen anything yet, but I do feel better!  I don’t even crave meat! No chicken, fish, beef, nothing which is totally weird because (like I said) I’m a hardcore carnivore.  What this has taught me is to be a little more creative with my meals and learn how to make veggies the main thing on my plate.  Unfortunately, I don’t really know how to cook and some of the things I make can be a little bland (for my bf).  He’s an amazing cook and I love it, he just doesn’t really do healthy.  He hates the idea of cooking something but trying to make in healthy, like whole wheat pasta, rice, cream sauce, less salt, you get the picture.  So I’m on my own on this and ok with it, sometimes.  It really does take a lot more planning and creativity being a vegetarian.  Sometimes I don’t think I’m getting enough protein and eating to many carbs.  This wouldn’t be a problem if I was still training for a marathon, but I don’t run that much anymore and now that I started getting back into the groove- I GOT INJURED!! Time to hit the elliptical and bike more often- snooze!  Overall, I think I’m going to keep eating this way and have more veggies in my life.  I’m not going to cut out meat, but it won’t be the main thing of every meal and limit to a couple times a week.  I love the feeling of less bloat hehe and no stomach pains! Yeah, that’s another issue and I’m full of them! I think tonight I’ll try to make a lentil salad I found online.  Doesn’t seem amazing, but good enough to eat. 

*Running update* I decided to take the rest of the week off and continue ice in the evenings like it’s my job!  I will be using the bike everyday and lifting weights.  I REALLY miss my high!  That will be my post later on tonight.

Tonight’s plan- Run a few errands while the bf runs with his friend boooo (jealous), finish organizing my calendar and blog about my runners high, running experience and why I run.  Hmmmm maybe I should make that 3 posts yay!


Lunch was another veggie wrap and berries, this time I added black beans and brought my chipotle tabasco sauce!

    Since I watch the ol' carb intake, I have gotten way creative with my veggies. I definitely still eat meat, mind you, but I've kicked up the veggies to a whole new level and love every minute. Try roasting them in the oven - a little olive oil and some sea salt or garlic and sea salt goes a long way (especially with aparagus, brussell sprouts, zucchini, and yellow squash). =)

  2. I am going to try going on the low carb dinner diet now, my bf will love that!
    Now that I'm not running my carbs need to go way down. I'm going to try roasting veggies too :)
    Oh and that sauce is awesome, i first tried it @ Chipotle and fell in love. Now all my wraps and "burrito" bowls feel like I bought at Chipotle.
